Low Carb Pizza

Hi Guys! Its been a while since I've posted a recipe but here it is! I have been trying this low-carb diet to try to eat a little healthier. So instead of constantly eating eggs for lunch, I decided to try this low carb pizza. Its crust less but tastes exactly like a normal pizza. You won't miss out on anything! The recipe follows below:

What you'll need:
2 cups cream cheese
1 cups shredded mozzarella
1 cup cheddar
1 egg
3 tablespoons tomato paste
Any choice of vegetables

Steps:
1. Preheat oven to 375 degrees F
2.First in a bowl, mix in 2 cups cream cheese with 1 cup of mozzarella and one egg. Mix until soft and creamy
3. Place in an oil greased pan and spread like a crust.
4. On top spread tomato paste and add cut vegetables on top like a normal pizza. 
5. Layer 1 cup of cheddar cheese evenly on top
6. Bake in oven until cheese has melted, vegetables cooked and your crust less crust is cooked.
7. ENJOY! :)

Thanksgiving Turkey Dinner

Now I know Thanksgiving dinner has passed, however, I think it's NEVER to late to enjoy a nice turkey roast! I love turkey dinner, and think that my family recipes is one I want to share with you!!
The recipe will be broken into different posts! ENJOY!
Turkey
What you'll need:
1 Turkey
1 Red Onion, diced
Home made or store bought stuffing (we usually use the store bought)
Lemon Juice
Allspice
Salt
Pepper
Olive oil
Cumin Powder
1/2 can tomato paste

Steps:
1.Preheat oven to 400 degrees
2. In a bowl, combine diced onion, tomato paste, olive oil and spices (amount based on preference)
3. Cook stuffing in a pot, and create a hollow opening inside the turkey
4. Stuff the turkey wi the stuffing with the desired amount
5. Rub turkey with the onion sauce until completely covered
6. Cover turkey with aluminum foil and bake for approximately 5 hours or until completely cooked and golden brown on outside
7. While cooking remember to check on turkey and replenish with the released sauces by taking a ladle and pouring over the turkey
8. When done, serve with gravy, and mash potatoes for the traditional Thanksgiving dinner!

Cake Pops (MultiCultural)


Now, I'm the type of person that likes lollipops. However, I  also really do love cake. And I absolutley LOVE chocolate.  So what if we were to combine these three spectacular creation? We would form, the magnicent, marvelous, cake on a stick known as the Chocolate CAKEPOP! :) These delicious chocolate balls of goodness taste amazing and are a great way to surprise the family with a little something special. Greath for parties, special ocassions and even the ocassional, "HEY I WANNA EAT SOMETHIN' SWEET!" days. The scrumptious recipe follows below.

What you'll need-
- Cake mix or recipe below
CAKE RECIPE
2 cups all-purpose flour
  • 2 cups white sugar
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup butter
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/2 cup unsweetened cocoa powder
  • - Milk or White Chocolate chips
    - Chocolate Icing or Icing of preferance
    -Coconut Shavings, Sprinkles or Nuts
    -Skewers or Thick round sticks to hold cake pops
    Steps-
    If you are baking cake...
    1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 11x17 inch sheet cake pan.
    2. In a large bowl, sift together the flour, sugar and baking soda. Stir in the eggs, vanilla and buttermilk. Set aside. In a saucepan combine butter, oil, cocoa and water. Bring to a boil and stir until smooth. Slowly blend into the flour mixture. Pour into prepared pan.
    3. Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. 
    4. After cake has cooled, with a fork smush the cake. And will smushing cake with fork, mix in the icing until it becomes sticky.
    5. After mixing and smushing the cake and icing, using the skewers, roll balls from the cake with your hands to a medium size and place on skewer. Let cool in fridge for about an hour or until firm and not falling off skewer or stick
    6. Will cake pops cool in the fridge, melt in a pot or in the microwave the chocolate chips until a thin liquid, not viscous
    7. After cake pops have cooled, dip the stick into the chocolate sauce we made from the chocolate chips until completley coated, then dip in shavings, sprinkles or nuts. Put on a plate face down
    8. Let the balls cool in the fridge for a little to maintain firmness and to let chocolate coating to cool and harden a little
    9. After cooling, Eat and ENJOY!
