Awaze Tibz (Ethiopia)

This recipe... is undescribably to die for. Meat, sauce, and onions, absolutely mix in this recipe. It is a very flavourful dish and was suggested to me by a friend. Awaze Tibz is a traditional Ethiopian recipe enjoyed by many people, and will be sure to satisfy a craving for some meat! :) The recipe follows below:

What you'll need-
1/8 cup peanut oil
2 red onions, chopped
1 inch fresh ginger, peeled and grated (about 1 1/2 tsp)
3 cloves garlic, crushed
2 tsp berberé
1 cup beef stock
1.2 lbs cubed lamb
yogurt, to taste

Steps-
Chop the onions (you can do a large dice or strips) and cook them until golden (10-15 min) over medium high, or until you can no longer stand how good the house smells. Take your time getting them nice and golden – that’s where all the flavor is.

Meanwhile, grate the ginger. Grating is the best way to get rid of those tough fibers and helps the ginger to “disappear” into the dish.
Add the ginger and crushed garlic to the pan and cook a few more minutes.

Toss in the berberé. Two teaspoons made me sweat… in a good way. Much more and I might have passed out.
Add the meat and brown it.
Cover with beef stock and simmer partially covered for about 35 minutes, or until the lamb is tender. If you’d like a less soupy texture simmer uncovered.
Don’t forget to season it with plenty of salt and pepper.
Awaze Tibs is incredible. Serve with a dollop of plain yogurt, to cool the mouth after each bite.
While the meal looks brown, brown, brown…the taste is incredibly complex and addicting.
Happiness is finding the perfect balance between sweet and spicy.
Serve hot with injera to friends. Laugh a lot while eating it. Use your fingers.

Goulash (Egypt)

Mideast Goulash
Hey Guys! So this is the first post in a while! Well this lip-smackin' recipe is a twist on baklava. Instead of a sweet dessert with a honey topping, it is a dinner meal, with ground beef and flaky Phyllo dough for a flavourful, delicious meal that will be sure to be loved by everybody! The recipe follows below:
What you'll need-
  • 1 package Filo pastry [NOTE: Also known as Phyllo, found in the frozen section]
  • 1/2 lb ground meat
  • 1 medium onion, diced
  • Mixed spice (savoury kind) [NOTE: I used a Creole Seasoning blend.]
  • Ghee (clarified butter) melted
  • 1 egg
  • a little milk
  • Salt and pepper

  • Steps-
    Stuffing:
    Using a small quantity of butter or oil, fry the onions until yellowish. Add the ground meat and fry. Add mixed spice, salt and pepper to taste (it needs quite a lot of mixed spice) and continue to fry until meat is cooked.
    Make sure that the filo pastry defrosts thoroughly BEFORE opening the package. Take a large, fairly shallow rectangular or square baking dish, grease it with a little of the ghee. CAREFULLY peel off a layer of pastry and lay it in the dish. Cut it so it fits the bottom exactly. Brush with ghee. Add another sheet and continue until you have 7 sheets. Don't put ghee on this layer. Put the ground meat on and spread evenly over the entire surface. Add another layer of pastry, brush with ghee and continue till you have 7 layers on top of the meat. Don't put ghee on the top layer. Cut into pieces approximately 5x3 inches (or suitable size according to the dish). Beat the egg with the milk add a LITTLE salt and pepper, pour it over the surface, tipp the dish to ensure it covers the entire surface. It will disappear down the cuts, don't worry. Bake in a hot oven for about 30 minutes or until golden brown, and risen. Alternatively put in the microwave on HI for 10 minutes, and brown under the grill.

    French Toast Meat Sandwich

    This is a great yummy for your tummy party for your taste buds dish it is basically bread filled with ground meat and dipped in egg then cooked in a pan. It is absolutely a tasty sandwich and one bite makes a rocking party in your mouth!!!! Hope you try it and it turns out perfect!!! .....:)........:)

    What you'll need- Bread
    Sliced bread (amount of sandwiches your willing to make)
    3 eggs beaten with salt and a teaspoon milk

    What you'll need- Filling
    1 cup of ground beef
    1 medium onion, chopped
    1/2 teaspoon garlic paste
    1/2 teaspoon ginger paste
    1 green hot pepper chopped
    coriander (optional) any amount
    Salt to taste
    2 teaspoon olive oil

    Steps-
    1. Mix all ingredients for the filling into one pot and cook on stove until the meat is well cooked
    2. Beat eggs with a pinch of salt and a teaspoon of milk
    3. Take 2 slices of bread then put the filling in between and sandwich the toast. Then dip both sides of the toast in the egg mix and cook on a hot frying pan that is sprinkled with olive oil until sandwich is browned and cooked!!! HOPE YOU ENJOY!!!

    Loukoumades (Greece), Kaymati (Kenya), Loukmatil Adi (Egypt) Loukma (Turkey)

     This recipe is a family favourite! It is a really nice way to treat yourself to a sugary sweet once in a while! This sweet consists of a soft dough that is deep fried and then coated in a syrup that crystallizes when cool. My family and usually enjoy it alongside some rich coffee. The recipe follows below:

    What you'll need-
    1 1/2 cup flour
    1 tsp dry yeast
    2 tsp vegetable oil
    Milk
    Syrup:
    3/4 - 1 Cup sugar
    1/3 - 1/2 cup water

    Steps-
    1. In a stand up mixer, combine  the flour, yeast, and oil at a slow speed
    2. In a cup, fill the glass with milk and add milk to the mixture until the dough is semi-firm dough,similar to a very viscous liquid but can still hold a shape.  (Look at 2nd picture)
    3. Leave in a bowl and let rise for 2-3 hours
    4. Heat up a deep fryer after mixture has risen and take small portion of dough, and with your hand push the dough out in between your index finger and thumb to form a ball shape. Fry until browned.
    5. In a seperate pot, boil the sugar and water until the mixture has become a syrup. Put the balls in the syrup, and toss the pot around with the balls to make the syrup crystallize around each ball. Take the balls out and let cool
    6. Enjoy!!!! :D

    Breakfast Sandwich

     I just made this for my brother this afternoon and he loved it!! This sandwich is just a simple idea to PUMP UP breakfast time. It tastes great and is an awesome way to start the day. It fulfills all the three of the four food groups making it a healthier breakfast option and it will take less then ten minutes to put everything together! The recipe follows below:
    What you'll need-
    Chicken or Turkey Breakfast Strips (As many as you prefer)
    22 slices of Whole Wheat bread
    Cheddar cheese (As much as you prefer)
    2 eggs
    Vegetable Oil
    Salt
    Pepper
    Margarine
    Steps-
    1. Take out a small frying pan and put the stove on medium to high.
    2. Put a capful of Vegetable oil on the hot pan and fry the Breakfast strips until browned
    3. In a cup, crack the eggs and with a fork, mix until the yolk is blended with the egg whites.
    Add a pinch of salt and pepper. You may put vegetables if you prefer.
    4. On the frying pan, cook the egg on one side, and fold in a semi circle and cook until browned and until there is no more uncooked egg seeping out.
    5. Shred some cheddar cheese on the side, and take the two slices of toast and put margarine on one side
    6. On one slice, face the margarine side outsides and put the egg, breakfast strips and cheese and sandwich the other slice, again facing the margarine on the outside cook the toast until browned
    7.  All done! ENJOY!

    Grandma's Cake!! :D

    Yummmm....... yummmmmm..... I need more!!!!!!
    This is an awesome recipe for some homemade love... It's Grandma's cake! There is only one way to describe my feelings for this recipe, I don't like it........ I LOVE it!!!!!' The recipe follows below, try it out and tell us how you like it!

    What you'll need
    2 cups flour
    2 t' spoon baking powder          yumm yummm yummmm yummmmm yummmmmm !!!!!!!
    2 cups sugar
    1 cup margarine
    1 cup sour cream
    5 eggs

    Steps-
    1.Preheat oven to 350 degrees
    2.Mix margarine with sugar until white and fluffy
    3.Then add the 5 eggs
    4.Afterwards, add the sour cream to the beaten eggs
    5.Seperatley mix the dry ingredents, flour and baking powder, then mix with the rest
    6.Grease pan with butter
    7.Bake for 45 minutes or until done
